Blue pea tea (Clitoria ternate) is a fresh and subtle tasting tea with a myriad of benefits. Traditionally grown in hot and humid climates and native to Thailand, it is offered to guests as a welcome drink dressed with ice, lemon juice and honey to create a refreshing iced tea.

Blue tea has antioxidant properties due to it’s high content of anthocyanins, anthocyanidins and catechins which also create the blue pigment in the flower. When water hot water is added to the fresh or dried flowers, they release the most amazing vibrant blue colour creating a mystical and magical tea.
